Double Dutch Hot Chocolate Cheese Cake

INGREDIENTS

FOR THE CRUST

  • 2 cups graham cracker crumbs
  • ¼ cup coconut sugar
  • ¼ cup coconut oil
  • set aside 3 tbsp of dry crumbs to sprinkle on top of cheesecake     
FOR THE CHEESECAKE
  • 2 blocks softened cream cheese / vegan cream cheese 
  • ½ cup icing sugar
  • ½ cup CASTLE KITCHEN DOUBLE DUTCH DARK CHOCOLATE HOT COCOA
  • 1 cup almond milk
  • 1 cup coconut cream (or whipping cream)
  • 1 cup mini marshmallows
  • chocolate syrup to drizzle   
    DIRECTIONS
    1. Combine crust ingredients in a bowl.
    2. Transfer to pie plate or springform pan. Pat down with spoon to edges.
    3. In a mixing bowl, beat cream cheese until light and fluffy. Add icing sugar and hot cocoa. Mix until smooth.
    4. Add almond milk and coconut cream slowly until smooth and fluffy.
    5. Fold in the marshmallows. Pour into pan with prepared crust.
    6. Freeze for minimum 4 hours.

    TOP TIP

    You may exchange the graham wafer crumbs for 24 Oreos (please note:  Oreos are not vegan).  You will need a food processor to pulse the crumbs.
